Thirty-nine percent of consumers see indulgence as consisting of comforting moments, followed by mood enhancement (35%), rich sensory enjoyment (34%), and healthier enjoyment (34%).1 

As consumers redefine indulgence, almond formats are becoming increasingly important drivers of food innovation. New almond-based products are increasingly highlighting multiple texture experiences, with creamy and smooth combinations gaining particular traction among consumers seeking satisfying-yet-better-for-you options. 

Almond Formats Feed Innovation

Almonds continue to lead nut-based innovation, generating more new product introductions than any other nut category between 2016 and 2025.2 Their versatility is a key advantage, with 14 distinct almond forms, from whole almonds and slices to flours, butters, and proteins. The Power of Flour

Among these formats, almond flour is a standout growth driver. In biscuits and cookies, almond flour has delivered a compound annual growth rate of 10.4%, fueled by consumer demand for better-for-you indulgence, gluten-free alternatives, and higher-protein formulations.2 

A versatile ingredient used in gluten-free and low-carb snacks, almond flour provides more protein, healthy fats and dietary fiber compared to traditional wheat flour. Brands such as Siete use almond flour to create grain-free chocolate chip cookies with coconut sugar and Mexican vanilla, while Sweet Addison’s incorporates almond flour into protein-rich cookies that deliver 17 grams of protein alongside a clean-label ingredient deck. Almond flour is also helping shape the next generation of gut-health-focused snacks. Drumroll’s Mini Muffins, which combine almond flour with plant protein and fiber, provide both protein and prebiotic benefits.

The Boost From Butter

Almond butter is another format inspiring innovation, bringing rich flavor, creamy texture, and nutritional appeal to indulgent snacks and baked goods.  

The natural oils in almond butter act as an emulsifier, helping blend fats and liquids for a smoother, creamier texture and a more indulgent mouthfeel. 

HighKey’s Mini Chocolate Chip Protein Cookies use creamy, protein-rich almond butter as the primary ingredient, helping create a cookie with a moist, chewy texture while supporting the growing demand for healthier indulgence. 

Bite Me Almond Delight Lava Cookies are vegan, gluten-free, organic raw bars with a creamy almond butter filling, a rich nutty flavor, 5.2 grams of fiber, and no additives. And Nature Valley’s Cocoa Almond Butter Biscuits combine honey biscuits with a smooth cocoa almond butter center.  

These products demonstrate how almond butter can elevate both taste and functionality, helping brands create indulgent products that align with evolving consumer preferences.  

Plant-Forward Flourishes as Healthy Indulgence 

Today’s plant-forward approach emphasizes ingredients that deliver both flavor and nutrition, making almonds a natural fit for today’s “healthy indulgence” trend. Whether used as almond flour, almond butter, sliced almonds, or almond milk, almonds contribute richness, creaminess, and satisfying texture through their naturally occurring fats and proteins. The result: indulgent dishes that feel wholesome and contemporary, with less need for daily, refined ingredients or artificial thickeners. This approach provides a versatile way to meet growing consumer demand for craveable, plant-forward menu experiences.
