For the Matcha & White Chocolate Shell
  • 187.5 g White chocolate, melted
  • 12.5 g Cocoa butter, melted
  • 5 g Matcha powder, sifted
  • 14 g brown butter, melted
For the Almond Hullva Filling
  • 52.65 g Almond paste
  • 109.70 g Almond butter, melted
  • 30 g Almond hull powder
  • 149.19 g Granulated sugar
  • .68 g Vanilla paste
  • 87.76 g Water
  • 50 g Almonds, chopped, toasted
  • 25 g Miso paste
  • 20 g Brown butter, melted
For the Final Assembly
  • 45 g Shell coating
  • 35 g Almond hullva filling
  • 1 g Freeze dried strawberry granules
Preparation
For the Matcha & White Chocolate Shell
  1. Start by bringing a small pot to medium heat and place a glass bowl over the top to create a double boiler.
  2. Add the white chocolate, and cocoa butter and allow to melt.
  3. Once melted, add the sifted matcha powder and brown butter.
  4. Stir to combine and reserve in a piping bag until needed.
For the Almond Hullva Filling
  1. In a pot, combine the sugar and water. Cook until 280F.
  2. Add the almond butter, almond paste, vanilla paste, miso paste, and brown butter. Stir until combined.
  3. Add the almond hull powder and chopped almonds. Stir until combine and then cool on a tray at room temperature and reserve for final assembly.
For the Final Assembly
  1. Start by lining a cupcake tin with a paper insert. Then, using the shell coating, pipe 13g of the coating into the base of the lined tin. Allow to cool.
  2. Add 35g of crumbled almond hullva filling into the cupcake tin and top with the remaining shell coating.
  3. Garnish with freeze dried strawberry granules and allow to cool in the refrigerator until completely set and firm.
