Ube-Almond Cupcakes

Ingredients
Serves: 12
  • 1½ cups almond flour
  • 1 cup sugar
  • ¼ cup ube powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup water
  • ⅓ cup vegetable oil
  • 1 egg
  • 1 tbsp vinegar
  • 1 tbsp ube extract
  • 1 tsp almond extract
Preparation
  1. Preheat your oven to 350°F.
  2. Sift the almond flour, sugar, ube powder, baking soda, and salt into a large mixing bowl. Set aside.
  3. In a stand mixer, combine the water, vegetable oil, egg, vinegar, and ube and almond extracts. Using a paddle attachment, mix the ingredients until well combined.
  4. Slowly add the flour mixture into the bowl of the mixer on low speed, mixing until combined. This process should take about 1-2 minutes.
  5. While this is mixing, line your cupcake tins with liners. Divide the cake batter into the cupcake tins.
  6. Bake the cupcakes for about 18 minutes, or until an inserted toothpick comes out clean.
  7. Let the cupcakes cool and frost with your favorite frosting
