Almond Crepes with Chocolate-Almond Butter & Strawberries

These crepes are gluten-free and have a lightly toasted flavor from the almond flour. They can be used for sweet or savory applications. The chocolate-almond butter takes a classic flavor pairing and makes it spreadable. It’s a great basic sauce to have on hand for topping other desserts or using as a dip for fruit. Ingredients
Serves: 12
For the Almond Flour Crepes (yield 24 crepes)
  • 3 qt almond milk
  • 1 lb 4 oz gluten-free all-purpose flour
  • 10 oz almond flour
  • 6 eggs
  • 6 oz butter, melted
  • 1 ½ tsp kosher salt
For the Chocolate-Almond Butter (yield 3 cups)
  • 1 cup creamy almond butter
  • 4 oz whole roasted almonds
  • 2 oz semisweet chocolate chips, melted
  • ¼ cup coconut oil
  • 1 tbsp honey
  • ½ tsp kosher salt
For the Finished Dish
  • Pan spray, as needed
  • 12 oz strawberries, sliced
  • 1 tbsp powdered sugar
Preparation
For the Almond Flour Crepes
  1. In a blender jar, combine the almond milk, flours, eggs, butter, and salt.
  2. Blend on high for 45 seconds or until the mixture is smooth.
  3. Cover and refrigerate until ready to use.
For the Chocolate-Almond Butter
  1. In a blender jar, combine the butter, almonds, melted chocolate, oil, honey, and salt.
  2. Blend on high for 3 to 5 minutes, until the mixture is smooth and creamy.
  3. Cover and hold at room temperature.
For the Finished Dish
  1. Cook the crepes: Heat a 12-in nonstick or crepe skillet over medium heat and coat with pan spray.
  2. Ladle 3 oz crepe batter into the pan and swirl to evenly coat the surface.
  3. Cook for about 1 minute, until golden brown. Flip the crepe over.
  4. Cook for 1 more minute until slightly golden brown.
  5. Remove the crepe from the pan and stack it on parchment.
  6. Repeat to cook the remaining crepes.
  7. To plate, lay two crepes on a flat surface.
  8. Drizzle 1 tbsp chocolate-almond butter evenly over each crepe. Roll or fold the crepes and place them on a plate.
  9. Drizzle another 2 tbsp chocolate-almond butter over the crepes.
  10. Top with 1 oz strawberries and a dusting of powdered sugar.
