Almond Protein Waffles with Stone Fruit & Almond Streusel

Protein-rich breakfast is a great start to the day to maintain energy throughout the morning. These waffles are not only high in protein but gluten free, making them an ideal menu item for GF and vegetarian diets. Swap out seasonal fruit for the stone fruit, but don’t skip the streusel. Ingredients
Serves: 12
For the Almond Protein Waffles
  • 1 ½ cups almond flour
  • ¾ cup gluten-free all-purpose flour
  • 1/4 cup sugar
  • 1 ½ tsp baking powder
  • 1 ½ tbsp flax meal
  • 1 ½ tbsp chia seeds
  • 5 large eggs
  • 2 1/2 cups unsweetened almond milk
  • ¾ cup cottage cheese
For the Stone Fruit
  • 8 oz sliced yellow and white peaches
  • 8 oz sliced yellow and white nectarines
  • 2 oz sliced apricot
  • ¼ cup sugar
  • ½ tsp kosher salt
For the Almond Streusel 
  • 3 oz whole natural almonds
  • 1/3 cup quick-cooking oats
  • 3 tbsp packed brown sugar
  • 2 tbsp creamy almond butter
  • 2 tbsp canola oil
  • 1.4 oz almond flour
  • 1 1/2 tsp ground cinnamon
  • ¼ tsp kosher salt
Preparation
For the Almond Protein Waffles
  1. In a bowl, whisk together all the ingredients until full combined.
  2. Let rest for 30 minutes at room temperature or cover and refrigerate overnight before cooking.
  3. Preheat a waffle iron and use pan spray to lightly coat the iron.
  4. Pour about ½ cup batter on iron for each waffle and cook until golden and crisp.
  5. Respray the iron between batches as needed.
  6. Serve waffles immediately or keep them warm until service.
For the Stone Fruit
  1. In a bowl, combine the fruit with the sugar and salt. Stir to evenly coat.
  2. Let rest for at least 30 minutes to macerate before serving.
  3. Cover and refrigerate.
For the Almond Streusel
  1. In a bowl, stir together all the ingredients until well combined.
  2. Spread them on a baking sheet lined with parchment paper and toast at 300°F until crispy and golden, about 20 minutes.
  3. Let cool, then cover and hold at room temperature.
For each serving
  1. Plate a warm waffle and top with about 1 oz stone fruit and 1 tbsp streusel.
