Korean Sweet Rice Almond Bar

This recipe was created by the University of Massachusetts Amherst Dining team on behalf of the Almond Board of California for a special Almond Day menu. This kind of gluten-free bar is often served for holidays such as Lunar New Year.

Ingredients
Serves: 100
  • 4 lb 1 oz sweet rice flour
  • 3 lb 12 oz extra-fine sugar
  • 1 tbsp 2 tsp baking powder
  • 2 ½ qt whole milk
  • 2 ½ tsp kosher salt
  • 15 oz red bean paste
  • 8 ¾ oz fresh cranberries
  • 10 ¼ oz sliced almonds
  • Pan spray, as needed
Preparation
  1. In a large bowl, whisk together the rice flour, sugar, baking powder, and salt.
  2. Pour in the milk and stir to mix well.
  3. Fold in the red bean paste, cranberries, and almonds until well incorporated.
  4. Spray a half-sheet pan with pan spray. Spread the mixture into the pan and smooth the top.
  5. Bake the rice bars at 380°F for 35 to 40 minutes, until the top is browned and crisp.
  6. Let the bars cool completely, then cut into 1 x 3-inch bars. Serve immediately.
