Roasted Carrots with Labneh, Aleppo-Almond Sauce & Crispy Chickpeas

Ingredients
Serves: 3 oz
For the Labneh
  • 32oz whole-milk Greek yogurt
  • 1 tsp kosher salt
For the Crispy Chickpeas
  • 1 lb canned chickpeas, drained and rinsed
  • 1 tsp kosher salt
  • 1 tsp Aleppo pepper
  • Fryer oil as needed
For the Aleppo-Almond Sauce
  • 10 oz almond butter
  • 6 oz water
  • 2 oz lemon juice
  • 2 tsp Aleppo pepper
  • 1 tsp ground cumin
  • 2 tsp kosher salt
For the Roasted Carrots
  • 5 lb rainbow carrots
  • 2 oz olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp ground cumin
  • 2 oz chopped parsley
Preparation
For the Labneh
  1. In a bowl, whisk together the yogurt and salt
  2. Place in a strainer lined with cheesecloth, wrap with plastic wrap and place in refrigerator for at least 4 hours.
  3. Remove from refrigerator and cheesecloth and place in a container for service.
For the Crispy Chickpeas
  1. Drain and rinse the chickpeas, and then dry thoroughly.
  2. Deep fry at 350F for 3-4 minutes, or until very crispy.
  3. Drain well and toss with salt and Aleppo pepper.
For the Aleppo-Almond Sauce
  1. In a bowl, whisk together the almond butter and water until smooth.
  2. Add the remaining ingredients and mix well. Adjust texture or seasoning as needed.
For the Roasted Carrots
  1. Peel and cut carrots into thick batons- about 3 to 4 inches long and ½ to 1 inch thick.
  2. Toss the carrots with the olive oil and spices and spread them onto sheet pans.
  3. Roast at 425°F for 15 to 20 minutes or until well caramelized and tender. Cool to room temperature and reserve.
  4. On a platter or serving plate, spread some labneh. Place carrots on top and drizzle with the Aleppo-Almond Sauce, top with the Crispy Chickpeas and garnish with chopped parsley.
Notes
  1. This makes a beautiful presentation with small rainbow carrots with some of the stem left on.
