Almond Mango Lassi

Ingredients
Serves: 3
For the Soaked Almonds
  • 1 1/2 cups (350g) raw slivered almonds
  • 1 qt warm water
For the Lassi
  • 2 cups diced fresh mango
  • 1 ½ cups almond yogurt
  • ½ cup unsweetened almond milk
  • ¼ cup soaked almonds
  • 2 cups ice
  • 2 tbsp honey
  • ½ tsp lime zest
  • ½ tsp toasted sliced almonds
  • 1/8 tsp ground cardamom
Preparation
For the Soaked Almonds
  1. Place almonds in a container and pour the water over them until they are covered.
  2. Allow the almonds to soak at room temperature for at least 2 hours and up to 48 hours.
  3. To use, drain off the soaking liquid and discard.
For the Lassi
  1. Combine the mango, yogurt, almond milk, Soaked Almonds, ice, and honey in a blender jar.
  2. Blend on high speed until thoroughly combined.
  3. Divide between three 12-oz glasses.
  4. Garnish with the lime zest, sliced almonds, and cardamom and serve immediately.
