Matcha, Raspberry, and Almond Bostock

Created by foodthinque on behalf of Almond Board of California. Bostock is a traditional French pastry of bread soaked in syrup and topped with almond cream (frangipane). It’s a great way to use day-old bread! Think of it as the avocado toast of almonds by substituting the raspberries and matcha with other fruits, chocolate, coconut, or even salty cheese like feta.

Ingredients
Serves: 1
For the Matcha Milk Jam
  • 14 oz sweetened condensed milk
  • 2 tsp matcha powder
For the Almond Frangipane (yield 600 g)
  • ¾ cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 eggs
  • 1 1/3 cups (192 g) almond flour
  • 1/3 cup all-purpose flour
  • 1 tbsp almond extract
  • 1 tsp kosher salt
  • 1 tsp vanilla extract
For the Matcha Sugar
  • 1 tbsp matcha powder
  • ¾ cup (75 g) powdered sugar
For each Bostock
  • 1 thick slice (about 2 oz) brioche
  • 2 tbsp Matcha Milk Jam
  • ¼ cup Almond Frangipane
  • 6 fresh raspberries
  • 1 tbsp sliced almonds
  • 1 tsp Matcha Sugar
Preparation
For the Matcha Milk Jam
  1. In a bowl, whisk together the milk and matcha powder until fully incorporated.
  2. Cover and refrigerate.
For the Almond Frangipane
  1. In a stand mixer with the paddle attachment, cream the butter and sugar until smooth.
  2. With the mixer running, add the eggs, then the almond flour, all-purpose flour, extracts, and salt and beat until smooth.
  3. Cover and refrigerate.
For the Matcha Sugar
  1. In a bowl, whisk together the matcha powder and sugar until fully combined.
  2. Cover and store in a cool, dry place.
For each serving
  1. Place the bread on a sheet pan lined with parchment.
  2. Spread the Matcha Milk Jam on top, then spread the Frangipane over that, covering the entire surface of the bread.
  3. Arrange the raspberries on top and lightly press to secure them.
  4. Top with the sliced almonds.
  5. Bake at 350°F until the frangipane is golden brown and set, about 25 minutes.
  6. Dust the Bostock with the Matcha Sugar and serve.
