Moroccan Cauliflower & Almond Soup

Created by foodthinque on behalf of Almond Board of California. This recipe is based on a classic North African vegan soup, updated with almond nutrition and flavor. The Moroccan Spiced Almonds add crunch and warm spices, while the almond butter boosts the protein content and adds creamy dairy-free texture.

Ingredients
Serves: 12
For the Chermoula
  • 2 oz fresh cilantro, chopped
  • 2 oz fresh mint, chopped
  • 3 fl oz lemon juice
  • 4 fl oz extra-virgin olive oil
  • 1 ½ tsp kosher salt
  • ½ oz minced jalapeno
For the Moroccan Spiced Almonds
  • 8 oz sliced almonds
  • 1 tsp ground cumin
  • ½ tsp ground ginger
  • ¼ tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp cinnamon
  • ¼ tsp sugar
  • 2 tbsp canola oil
For the Cauliflower Almond Soup
  • 2 tbsp grapeseed oil
  • 6 oz diced yellow onion
  • 4 tbsp kosher salt
  • 2 tbsp creamy almond butter
  • 1 ¾ lb cauliflower
  • 3 ¾ cups water
  • ¼ cup extra-virgin olive oil
  • 12 oz chopped purple cauliflower, for garnish
Preparation
For the Chermoula
  1. In a bowl, combine all the ingredients and taste for seasoning.
  2. Cover and refrigerate.
For the Moroccan Spiced Almonds
  1. Place the almonds on a parchment-lined sheet tray.
  2. Toast at 300°F until lightly golden brown, about 7 minutes.
  3. In a bowl, toss the almonds with the spices, sugar, and oil to coat evenly.
  4. Cover and store.
For the Cauliflower Almond Soup
  1. In a pot, heat the grapeseed oil and sauté the onions and 1 tbsp of the salt.
  2. Add the almond butter and stir for 30 seconds.
  3. Add the cauliflower, another 1 tbsp salt, and the water.
  4. Bring to a simmer and cook until the cauliflower is tender, about 20 minutes.
  5. Using an immersion blender or working in batches, puree the soup. Stir in the oil and the remaining 2 tbsp salt and check for seasoning.
  6. Cover and refrigerate to rewarm for service or hold hot.
  7. To serve, portion 6 fl oz of soup and top with 1 oz purple cauliflower, ½ oz Chermoula, and 1 tbsp Moroccan Spiced Almonds.
