Overnight Oats with Almond Butter and Cinnamon-Almond Streusel

Created by foodthinque on behalf of Almond Board of California. Overnight oats are an easy breakfast to prep ahead and this version provides extra protein from almond milk and butter. There is minimal sweetener, so the marinated berries add extra flavor, and the streusel adds a welcome crunch.

Ingredients
Serves: 12
For the Overnight Oats
  • 2 ¾ cups quick-cooking oats
  • 3 tbsp chia seeds
  • 3 ¼ cups unsweetened almond milk
  • 3 tbsp unsweetened coconut
  • ½ tsp kosher salt
  • 1 1/2 tbsp maple syrup
  • 3 tbsp creamy almond butter
For the Marinated Blueberries
  • 12 oz blueberries
  • 1 tbsp ground cinnamon
  • 3 tbsp powdered sugar
For the Cinnamon-Almond Streusel
  • 3 oz chopped almonds
  • 1 oz quick-cooking oats
  • 1 1/4 oz brown sugar
  • 2 tbsp creamy almond butter
  • 2 tbsp canola oil
  • ½ cup almond flour
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt
Preparation
For the Overnight Oat
  1. In a bowl or container, stir together all the ingredients.
  2. Cover and refrigerate for at least 8 hours.
For the Marinated Blueberries
  1. Combine the berries, cinnamon, and sugar in a bowl. Toss to combine.
  2. Allow the berries to macerate for at least 30 minutes before using.
  3. Cover and refrigerate.
For the Cinnamon-Almond Streusel
  1. In a bowl, stir together all the ingredients until well combined.
  2. Spread them on a baking sheet and toast at 300°F until crispy and golden, about 20 minutes.
  3. Let cool, then cover and hold at room temperature.
For each serving
  1. Scoop 3 oz of Overnight Oats into a bowl.
  2. Top with 1 oz Marinated Blueberries and ½ oz Cinnamon-Almond Streusel.
