Almond Butter-Date Bites

Ingredients
Serves: 40
  • 1/2 c rolled oats
  • 1/2 c chopped pitted dates or dried figs
  • 1/2 c cocoa powder
  • 1/3 c maple syrup
  • 1/2 c almond butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp fine sea salt
  • 1/2 c whole almonds, chopped
  • 1/4 tsp cinnamon (optional)
  • Extra cocoa powder or desiccated coconut for coating
Preparation
  1. Add all ingredients (except extra cocoa powder or desiccated coconut for coating) in a food processor and pulse to blend. Mixture will be sticky.
  2. If the mixture is wet, add more oat; if mixture is dry, add more date or fig.
  3. Cover and refrigerate for 2 hours.
  4. Use a small cookie scoop to roll into balls by hand.
  5. Coat with cocoa powder or desiccated coconut.
