Stone Fruit Gluten-Free Almond Galette

This gluten-free crust is a great master recipe to have on hand. The almond flour adds toasty flavor and texture, making this crust a flavorful choice for any pie or tart. Swap out other stone fruits like plums and cherries for the peaches and nectarines here for a variation. Created by foodthinque on behalf of Almond Board of California.

Ingredients

For the Gluten-Free Almond Dough
  • 4 oz gluten-free all-purpose flour
  • 2 oz almond flour
  • 1 tbsp sugar
  • ½ tsp kosher salt
  • 4 oz cold unsalted butter, diced
  • 2 oz plain yogurt
  • 1 tbsp cold water
For the Filling
  • ½ lb yellow and white peaches, sliced
  • ½ lb yellow and white nectarines, sliced
  • 4 oz apricots, sliced
  • 3 tbsp cornstarch
  • ½ cup sugar
  • ½ tsp kosher salt
  • 5 oz almond frangipane
  • ½ cup gluten-free all-purpose flour
For the Garnish
  • 1 egg, beaten
  • 2 tbsp turbinado sugar
  • About 2 tbsp sliced almonds
Preparation
For the Gluten-Free Almond Dough
  1. In a bowl, whisk together the flours, sugar, and salt.
  2. Cut the cold butter into the flour using a pastry blender until the butter is the size of peas.
  3. In a small bowl, whisk together the yogurt and water.
  4. Drizzle it over the flour mixture and bring the dough together, adding more cold water if needed.
  5. Press the dough into a disk and wrap it in plastic. Refrigerate for at least 2 hours.
For the Filling
  1. In a bowl, toss the peaches, nectarines, and apricots with the cornstarch, sugar, and salt. Make sure the cornstarch is fully dissolved.
  2. Line a sheet pan with parchment. Dust a work surface with flour and roll out the dough to a 12- to 14-in round. Transfer it to the sheet pan.
  3. Spread the frangipane over the dough, leaving a 2-in border.
  4. Layer the fruit over the frangipane and fold in the dough border over the fruit.
  5. Brush the crust with the egg wash and sprinkle it with the turbinado sugar and sliced almonds.
  6. Bake the galette at 400°F until the crust is golden and the fruit is bubbling, about 35 minutes. Let cool before cutting.
